Hoshi gaki Yokan 干し柿 ようかん 【英語】
The amount of sugar is limited, and sugar extracted from ripe dried persimmons is added.
The ripe persimmon paste is mixed with diced dried persimmons that have been aged for over two years to concentrate their flavor.This yokan is made only from persimmons without using water.
完熟柿のペーストに、2年以上熟成させてうま味を凝縮した角切りの干し柿をあわせています。
砂糖の量は控え、完熟した干し柿から抽出した糖を加えています。
